Yummy Whole-wheat Apple Pancakes

This is a recipe I have adapted from a one I found on http://www.cooks.com/ you can see the original here It got a 4 star rating from the kids and H!


YUMMY WHOLE-WHEAT APPLE PANCAKES

DRY INGREDIENTS:
1 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon all spice
1/2 teaspoon baking powder


WET INGREDIENTS:
1 cup rice milk (or cow's) with 1 teaspoon apple cider vinegar (let sit for a minute)
1 tablespoon melted butter or margarine
1 teaspoon vanilla
1/2 cup finely chopped apple
1 egg, beaten

Vegetable cooking spray


In a large bowl combine the dry ingredients, whisk together to combine. In a small bowl combine wet ingredients and mix together.


Pour the wet ingredients in to the dry and mix to combine, do not over mix. If the batter is too thick add milk but the tablespoon. Heat non stick pan to medium - medium high heat or griddle to 350 degrees spray with cooking spray. Scoop batter out on to a hot oiled griddle by the 1/4 cup full. Cook until edges are drying out then flip cook until browned on the other side.
